Simone Weingarten is a Certified Eating Disorder Registered Dietitian Specialist and Certified Eating Disorder Specialist Consultant who helps individuals of all ages reclaim their relationship with food, movement, and their bodies. She specializes in eating disorder treatment and sports nutrition, supporting clients through disordered eating and all eating disorder diagnoses—including anorexia nervosa, bulimia nervosa, binge eating disorder, OSFED, and ARFID. Simone’s approach is grounded in an inclusive, weight-neutral, anti-diet philosophy, rooted in Health at Every Size® (HAES®), intuitive eating, and the belief that every person—regardless of age, size, diagnosis, or background—deserves full recovery, food freedom, and the right to feel at home in their body.

Simone’s passion for this work is deeply personal. Growing up in a diet-focused environment and competitive sports culture, she was once labeled as “unhealthy” and “obese,” and was told by medical professionals and loved ones that she needed to lose weight—fast. In an effort to meet those expectations, she lost over 70 pounds while also battling multiple injuries from gymnastics and a serious car accident. During that time, Simone followed extreme and unsafe routines, working out more than three hours a day, six to seven days a week, while consuming fewer than 700 calories a day. While she did achieve the external results she was praised for, she became completely trapped in rigid rules, obsession, and a lifestyle that drained her physically and emotionally. Even at her smallest, it never felt like it was enough.

Her “gym-rat” days came to an abrupt stop when she was told she needed shoulder surgery and could not train for months. In that moment, Simone realized she couldn’t continue starving herself—and she feared weight gain more than anything. That turning point pushed her to begin researching nutrition, movement, and healing in a way she never had before. It was also when she finally recognized what she had been living with all along: an eating disorder.

As she recovered, Simone re-evaluated her goals and discovered something life-changing: being “skinny” didn’t make her healthy, confident, happy, or free. Her goals shifted from shrinking her body to building a life rooted in strength, balance, and well-being. She became passionate about helping others understand why fad diets and extremes don’t work—and how sustainable nourishment, self-trust, and compassionate care can change someone’s life. She enrolled in nationally recognized courses, became a Certified Trainer, and that journey ultimately led her to pursue her dream of becoming a Registered Dietitian.

Simone returned to school at LIU Post to complete her dietetics education and later applied and was accepted to Auburn University for her master’s degree and dietetic internship. Her diverse training and experiences across multiple internship rotations deepened her understanding of how nutrition is so much more than food—it’s medical nutrition therapy, performance fueling, and the foundation for a meaningful, empowered life.

Today, Simone brings both deep clinical expertise and lived experience into her work. With years of experience across the full continuum of eating disorder care—including residential, PHP, IOP, and outpatient—she supports clients through individualized care, meal support, food exposure therapy, sports performance fueling, and lifestyle coaching. Her work helps clients reconnect with their body’s cues, challenge disordered patterns, rediscover the pleasure of eating, and live a life no longer dictated by shame or rigid rules. Whether you’re a teen navigating recovery, a parent supporting a child, a college student learning independence, an adult feeling stuck in the cycle, or an athlete working toward performance and balance—Simone’s goal is to meet you where you are with empathy, honesty, and hope.

In addition to client care, Simone is deeply committed to supporting fellow dietitians as they grow in confidence and skill in eating disorder treatment and weight-inclusive nutrition counseling. She offers supervision and mentorship for RDs pursuing their CEDS credential and creates a collaborative, affirming space to navigate complex cases, strengthen clinical judgment, and build sustainable, values-aligned careers—without burnout, fear, or rigidity. Simone believes supervision is more than professional development—it’s a space to reflect, evolve, and reconnect with the deeper purpose behind this work.

Prattville Farmers Market

At the Prattville Farmers Market, I had the opportunity to help a community select fresh fruits and vegetables from vendors while preparing and taste testing recipes with them that incorporated those same food. This rotation allowed me to make an impact on a small community by introducing them to a variety of new meals and snacks while supporting local farmers. I enjoyed being able to educate and connect with the community.
